

Ingredients:
1 whole turkey (10-12 lbs)
1/2 cup olive oil
3 tbsp dried herbs (rosemary, thyme, sage)
4 garlic cloves, minced
Salt and pepper to taste
1 lemon, quartered
1 onion, quartered
Charcoal for grilling
Instructions:
Prepare the Grill:
Set up your charcoal grill for indirect heat (one side with coals, the other without).
Preheat to 350°F.
Season the Turkey: Rub the turkey with olive oil, herbs, garlic, salt, and pepper. Stuff the cavity with lemon and onion.
Grill the Turkey: Place the turkey on the cooler side of the grill.
Cover and cook for 2.5-3 hours, or until the internal temperature reaches 165°F.
Rest & Serve: Let the turkey rest for 20 minutes before carving. Enjoy the smoky, flavorful results!

RECIPE FOR CRISPY MARSHMALLOWS:

1. **Prepare the Grill:** Light the charcoal and let it burn until the coals are glowing red with a light ash layer (20-30 minutes).
2. **Skewer the Marshmallows:** Use a long metal skewer or wooden stick (soaked in water) to pierce the marshmallow.
3. **Roast:** Hold the marshmallow about 6-8 inches above the coals, rotating it slowly for even golden-brown roasting.
4. **Crisp the Exterior:** Move it closer to the coals for a few seconds to get a crispy, golden layer without burning.
5. **Serve & Enjoy:** Remove and enjoy on its own or make s'mores!
